Southwestern Vegetable Soup

Southwestern Vegetable Soup Recipe, low in fat, Just toss all the ingredients in a pot and simmer. Garnish with some shredded cheese and crumbled tortillas, and prepare to take the chill off. 


Ingredients:

  • 6 cups chicken broth
  • 1 14.5-ounce can diced tomatoes, with juice
  • 1 cup water 
  • 1 cup canned dark red kidney beans, with liquid  
  • 1 cup frozen yellow cut corn 
  • 1 cup frozen cut green beans
  • 1 4-ounce can diced green chilies
  • 1/2 cup diced Spanish onion
  • 1/2 cup tomato sauce
  • 6 corn tortillas, minced
  • 1 1/2 teaspoons chili powder
  • dash garlic powder 

Garnish

  • 1 cup grated cheddar/jack cheese blend
  • 1 cup crumbled corn tortilla chips 

How to cook:

  1. Combine all the soup ingredients in a large saucepan or soup pot over high heat. Be sure to mince the corn tortillas into small pieces with a sharp knife before adding them to the soup.
  2. Bring soup to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the soup has thickened and tortilla pieces have mostly dissolved.
  3. To serve soup ladle 1 1/2 cups into a bowl. Sprinkle a heaping tablespoon of the grated cheddar/jack cheese blend over the top of the soup, and then a heaping tablespoon of crumbled corn tortilla chips over the cheese.

Makes 6 servings.

Cucumber Salad

Cucumber Salad Recipe,


Ingredients:
2 md Cucumbers w/skin;half, seed, 1/2" slices
1/4    Red Spanish onion; 1/2" dice
1 lg Ripe tomato; dice
8 oz Paul Newman's Olive Oil and Vinegar Dressing
1 ts Dry dill weed
1/2 ts Dry parsley; mince
1/4 c  Olive oil


How to make: 
Combine cucumbers with the rest of the ingredients in non-metal refrigerator container, tightly covered. Marinate for 24 hours in fridge before serving. Do not freeze. Cooking becomes fun with an easy recipe

Chicken Creamed Spinach

Chicken Creamed Spinach Recipe, tasty simple chicken recipe to cook at home


Ingredients:
  •  1 tb Flour
  • 4 tb Butter, margarine or canola-oil
  • 1/2 ts Garlic salt
  • Salt and pepper
  • 20 oz Frozen chopped spinach; cook and drain
  • 1 sm Onion; diced

How to cook:
In a saucepan, on medium heat, stir together with wire whisk soup, flour, butter, garlic salt, salt and pepper until smooth and piping hot. Combine with spinach and onion. Cooking becomes fun with an easy recipe
(NOTE: I'd substitute fresh minced garlic for the garlic salt).

Special Beans and Rice

Ingredients:
30 ounce can of Red beans
1 teaspoon white pepper
4 tablespoons butter
1/4 teaspoon paprika
dash of cayenne
dash of garlic powder
1 1/2 cups converted rice cooked

How to cook:
Pour beans with there liquid into a saucepan and cook over medium heat. Add the seasonings and butter. When the mixture begins to boil use a fork to mash 1/2 the beans. Cook for 10 to 20 minutes to until it looks like bean paste with big beans in it. Mix in rice. Cooking becomes fun with an easy recipe.

Coleslaw


Coleslaw Recipe, tasty topping recipe to cook at home

Ingredients:
8 1/8 cups cabbage
1/3 cup carrot
1 teaspoon onion chopped fine
1/3 cup sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 cup milk
3/4 cup buttermilk
2 tablespoons lemon juice
1/2 cup mayonnaise

How to cook:
First core the cabbage and shred the cabbage fine using the fine disk for the shredder attachment to the mixer. Then shred the cabbage. In a bowl combine with a whisk combine the buttermilk, mayonnaise, milk and lemon juice mix till well combined. Then add the seasoning. The last step is to add the sugar add the sugar to the sauce until well mixed in. Add the sauce to the cabbage and carrot mixture and mix well and allow the mixture to marinate for 13 hrs. Cooking becomes fun with an easy recipe
